Brussels, Avos, and Tuna

The other day I was trying to figure out a new recipe for lunch. I wanted protein and fiber in it but with flavor and no dressing. I wanted something quick and healthy. This recipe is sort of simple but not as simple as the other recipes I posted. As you can see by now, I love avocados. Yes. This recipe has avocados also. Here are the ingredients:

1/2 Avocado
1/2 can of Tuna
10 Brussel Sprouts
1/2 tbspn Coconut Oil
2 cloves of Garlic
1 Scallion
Black Pepper
Salt

Prepare all your vegetables: Cut avocados into cubes. Cut off the stems of the brussel sprouts and cut them into quarters. Chop/mince garlic. Slice up the scallions.

Heat your pan on medium. When it is hot,  add the coconut oil. Then add garlic until they turn golden yellow. Add the brussel sprouts. Add salt and pepper. Stir fry. Should take about 4-5 minutes until they’re cooked. Lastly add the scallions.  Stir fry it and turn off heat.

Prepare dish: transfer the brussel sprouts into a bowl. Add avocados and tuna (can mix them together beforehand). You can add more flavoring to it if needed.
